No-Bake Brownie Bites are a quick, easy, and healthy treat combining rich chocolate, nuts, and dates into a fudgy, chewy snack. These bites are perfect for satisfying chocolate cravings without the need for baking.

Ingredients

1 1/2 cups pitted dates (about 1012 dates)

1/2 cup walnuts or almonds (or a mix of both)

1/4 cup unsweetened cocoa powder

1/4 cup chocolate chips (optional, for extra richness)

1 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup almond butter or peanut butter

1/4 cup unsweetened shredded coconut (optional, for coating)

Instructions

  1. Place the pitted dates in a food processor and pulse until they form a sticky, dough-like texture. If the dates are too dry, soak them in warm water for 10 minutes before processing.
  2. Add the walnuts (or almonds), cocoa powder, chocolate chips (if using), vanilla extract, and salt to the food processor. Pulse until everything is finely chopped and well-combined. The mixture should stick together when pressed.
  3. Add the almond or peanut butter to the mixture and pulse until evenly incorporated. The mixture should be sticky and hold its shape when pressed.
  4. Use your hands or a spoon to scoop out small portions of the mixture and roll them into bite-sized balls (about 1 inch in diameter). Optionally, roll the brownie bites in shredded coconut for an extra touch of flavor and texture.
  5. Place the brownie bites on a baking sheet or plate and refrigerate for at least 30 minutes to help them firm up. Once chilled, they’re ready to serve!

Notes

Customize your brownie bites with add-ins like mini chocolate chips, dried fruit, or a pinch of sea salt on top for a sweet-salty bite.

For a vegan version, use dairy-free chocolate chips and nut butter.

If you’re nut-free, substitute the nuts with more oats or seeds like sunflower or chia seeds.

These can be stored in the refrigerator for up to 1 week or frozen for up to 3 months.

If the mixture feels too dry, add more nut butter or dates to reach the desired consistency.
