Mushroom Chicken is a flavorful and comforting dish that combines tender chicken with a creamy, savory mushroom sauce. The richness of the mushrooms, garlic, and herbs elevate the chicken, creating a hearty yet easy-to-make meal perfect for weeknight dinners or special occasions.

Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1/2 cup onion, diced

2 cloves garlic, minced

1 1/2 cups mushrooms, sliced (button mushrooms or cremini work well)

1/2 cup chicken broth (or white wine for extra depth of flavor)

1/2 cup heavy cream

1 teaspoon dried thyme (or fresh thyme if available)

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 5-7 minutes per side, until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set it aside.
  3. Cook the Mushrooms: In the same skillet, add the diced onion and sauté for about 2 minutes until softened. Add the minced garlic and sliced mushrooms, and cook for another 5-7 minutes until the mushrooms are tender and browned.
  4. Make the Sauce: Pour in the chicken broth (or white wine), scraping the bottom of the pan to release any flavorful brown bits. Bring the mixture to a simmer and let it cook for 2-3 minutes. Add the heavy cream and dried thyme, stirring to combine. Let the sauce simmer for an additional 5 minutes, or until it has thickened slightly.
  5. Return the Chicken to the Skillet: Place the seared chicken breasts back into the skillet with the mushroom sauce. Spoon some of the sauce over the chicken and let it simmer for 3-5 minutes to ensure the chicken is heated through and infused with the sauce.
  6. Serve: Garnish with freshly chopped parsley and serve the Mushroom Chicken with your choice of sides like mashed potatoes, rice, or steamed vegetables.

Notes

Add Spinach: For extra flavor and nutrition, stir in a handful of fresh spinach leaves during the last few minutes of cooking.
