Ingredients

Beef and Vegetables

  • 1 pound lean ground beef
  • 1 small bunch scallions (green parts only), cut into 1 inch pieces
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

Sauce

  • 1/3 cup packed brown sugar
  • 1/3 cup water
  • 1/3 cup low sodium soy sauce
  • 1 tablespoon cornstarch
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Brown the Ground Beef: Heat a skillet over medium-high heat and add the ground beef. Cook for about 8-10 minutes, breaking it up as it cooks until fully browned. Remove excess fat from the skillet as necessary to keep the dish from becoming greasy.
  2. Prepare the Sauce: While the beef is cooking, whisk together the brown sugar, water, low sodium soy sauce, cornstarch, grated fresh ginger, minced garlic, and crushed red pepper flakes (optional) in a bowl until fully combined.
  3. Add Scallions and Sauce: Stir the green parts of the scallions into the browned beef in the skillet. Pour the prepared sauce over the beef and scallions and cook for an additional 2-3 minutes, stirring frequently, until the sauce thickens and coats the beef.
