Mini Cucumber Sandwiches are a classic, elegant, and refreshing snack perfect for tea parties, brunches, or as a light appetizer. These bite-sized sandwiches feature crisp cucumber slices and a creamy spread, offering a delightful balance of crunch and creaminess. They’re easy to make and great for any occasion.

Ingredients

8 slices of white or whole wheat bread (or your favorite bread)

1 medium cucumber, thinly sliced

1/2 cup cream cheese (or dairy-free cream cheese for a vegan version)

2 tablespoons fresh dill, chopped (optional)

1 tablespoon mayonnaise (optional)

Salt and pepper, to taste

Fresh parsley or dill for garnish (optional)

Instructions

  1. Prepare the Spread: In a small bowl, combine the cream cheese and mayonnaise (if using). Stir until smooth. Add the fresh dill, salt, and pepper, then mix well. Taste and adjust seasoning if needed.
  2. Prepare the Bread: Cut the crusts off the bread slices for a refined look (optional). This makes the sandwiches more bite-sized and visually appealing.
  3. Assemble the Sandwiches: Spread a generous layer of the cream cheese mixture on one side of each slice of bread. Layer the thin cucumber slices evenly on top of the spread, then top with another slice of bread, spread side down.
  4. Cut into Mini Sandwiches: Use a sharp knife to cut the sandwiches into quarters or halves, or into triangles for a more elegant presentation.
  5. Garnish (Optional): Garnish with fresh parsley or dill on top for added flavor and color.
  6. Serve: Arrange the mini cucumber sandwiches on a platter and serve immediately. They are best enjoyed fresh but can be refrigerated for a short time before serving.

Notes

Herb cream cheese: Add finely chopped fresh herbs like basil, chives, or tarragon for an extra flavor twist.

Vegan version: Use dairy-free cream cheese and a vegan mayo option or hummus for a plant-based spread.

Avocado spread: Use mashed avocado with lime juice and salt as a creamy, fresh twist instead of cream cheese.
