Mexican Casserole is a comforting and flavorful dish that combines seasoned meat, beans, cheese, and tortillas into a hearty one-pan meal. This easy-to-make casserole is perfect for busy nights or casual get-togethers and is customizable to suit various preferences.

Ingredients

1 lb ground beef (or ground chicken/turkey)

1 medium onion, chopped

2 cloves garlic, minced

1 packet taco seasoning (or 2 tablespoons homemade seasoning)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained

10 small corn or flour tortillas, cut into quarters

2 cups shredded cheddar cheese (or a Mexican blend)

1 cup sour cream (optional, for serving)

1 tablespoon olive oil

Salt and pepper, to taste

Fresh cilantro, chopped (optional, for garnish)

1 cup salsa (optional, for serving)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish with olive oil or cooking spray.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook for 3-4 minutes until softened. Add garlic and cook for another minute.
  3. Add ground beef (or chicken/turkey) to the skillet and cook until browned, breaking it apart with a spoon. Drain any excess fat.
  4. Stir in taco seasoning, black beans, corn, and diced tomatoes. Cook for 3-4 minutes, then season with salt and pepper.
  5. Layer the bottom of the casserole dish with half of the tortilla quarters.
  6. Spoon half of the meat mixture over the tortillas, then sprinkle with 1 cup of shredded cheese.
  7. Repeat the layers with remaining tortillas, meat mixture, and cheese.
  8. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  9. Remove from the oven and cool for a few minutes before serving.
  10. Garnish with fresh cilantro, sour cream, and salsa as desired.

Notes

For a gluten-free version, use gluten-free tortillas and ensure your taco seasoning is gluten-free.

Feel free to add extra veggies like bell peppers, zucchini, or spinach for added nutrition.

For a spicier version, add sliced jalapeños or chopped green chilies to the meat mixture.
