The Mediterranean Spinach Grilled Cheese is a healthier twist on the classic grilled cheese, featuring spinach, feta, and Mediterranean herbs, making for a savory and vibrant sandwich.

Ingredients

2 slices of your favorite bread (sourdough works wonderfully)

1/2 cup fresh spinach, chopped

2 tbsp feta cheese, crumbled

1 tbsp sun-dried tomatoes, chopped

1 tsp olive oil (for sautéing)

1 tbsp butter (for grilling)

1/2 tsp garlic powder

1/2 tsp dried oregano

Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat. Add the chopped spinach and sauté for 1-2 minutes until wilted. Remove from heat and stir in the crumbled feta, sun-dried tomatoes, garlic powder, oregano, salt, and pepper.
  2. Butter one side of each slice of bread. On the non-buttered side of one slice, spread the spinach and feta mixture evenly. Top with the second slice of bread, buttered side up.
  3. Heat a skillet over medium heat. Place the sandwich in the pan and grill for 3-4 minutes per side, or until golden brown and crispy, and the cheese is melted.
  4. Slice and serve immediately for a warm, delicious lunch or snack.

Notes

For a heartier meal, try adding grilled chicken or turkey slices.

Switch the feta for goat cheese or sharp cheddar for a different flavor.

For a vegan version, use dairy-free cheese and plant-based butter.

To enhance the Mediterranean theme, add roasted red peppers, olives, or onions.

Leftovers can be stored in an airtight container for up to 2 days. Reheat in a skillet over low heat with butter if needed.
