Ingredients

2 large chicken breasts (boneless and skinless)

2 medium zucchinis, sliced into rounds

1/2 cup crumbled feta cheese

1/4 cup sun-dried tomatoes, chopped

1/4 cup Kalamata olives, sliced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup fresh parsley, chopped (optional for garnish)

1 tablespoon lemon juice (optional, for extra flavor)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a small bowl, combine the olive oil, oregano, basil, garlic powder, salt, and pepper. Mix well.
  3. Rub the seasoning mixture evenly over both sides of the chicken breasts.
  4. Place the seasoned chicken breasts in the baking dish. Surround the chicken with the sliced zucchini, ensuring it’s evenly distributed around the chicken.
  5. Sprinkle the chopped sun-dried tomatoes, sliced olives, and crumbled feta cheese over the chicken and zucchini.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is cooked through.
  7. Once the chicken is cooked, remove from the oven and drizzle with fresh lemon juice, if desired, for an added burst of brightness.
  8. Garnish with fresh chopped parsley before serving for a pop of color and flavor.
  9. Serve immediately and enjoy!

Notes

Feel free to add or swap other Mediterranean veggies, like bell peppers, cherry tomatoes, or red onions, for extra flavor and color.

To make the dish dairy-free, omit the feta or substitute with a dairy-free cheese.

For a spicier dish, add red pepper flakes or chili powder before baking.

If you prefer boneless, skinless chicken thighs, they can be substituted for chicken breasts for a juicier, more flavorful option.
