  • ½ teaspoon crushed red pepper flakes (optional garnish)
  • Fresh chopped parsley or basil (optional garnish)

Instructions

  1. Heat the olive oil and garlic: In a large skillet over medium heat, warm the olive oil. Add the minced garlic and sauté for 30 to 60 seconds, just until fragrant but not browned.
  2. Add flour and seasoning: Stir in the all-purpose flour and Italian seasoning. Cook for about one minute, stirring continuously to incorporate the flour fully and create a roux base.
  3. Add sun-dried tomatoes and broth: Mix in the drained sun-dried tomatoes, chicken broth, salt, and freshly cracked black pepper. Stir everything together and bring the mixture to a gentle simmer over medium-high heat.
  4. Cook the tortellini: Add the cheese tortellini to the simmering broth. Cook for approximately 5 minutes, stirring occasionally to prevent sticking, until tortellini is tender and cooked through.
  5. Finish the sauce: Lower the heat to low and stir in the heavy cream and freshly grated Parmesan cheese. Continue to cook for another 2 minutes until the sauce thickens and coats the pasta.
  6. Add spinach: Toss in the fresh spinach and cook for about 1 minute, just until wilted and vibrant green.
  7. Garnish and serve: Sprinkle crushed red pepper flakes, fresh chopped parsley or basil, and extra Parmesan cheese if desired. Serve immediately while hot and creamy.
