Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 2 medium cloves garlic (minced)
  • 2 teaspoons Italian seasoning
  • 1 1/2 cups vegetable broth
  • 16 ounces gnocchi
  • 1/2 cup sun-dried tomatoes (drained and chopped)
  • 1/8 teaspoon crushed red pepper flakes
  • 1/8 teaspoon kosher salt (plus more to taste)
  • 1/4 teaspoon freshly ground black pepper (plus more to taste)
  • 1/2 cup grated Parmesan cheese (plus more for serving)
  • 2/3 cup heavy whipping cream
  • 2 cups baby spinach (roughly chopped)
  • 5-6 fresh basil leaves (chiffonaded, plus more for garnish)

Instructions

  1. Sauté Aromatics: Place a large sauté pan over medium-low heat and add the olive oil. When hot, add minced garlic and Italian seasoning. Sauté for one minute until the garlic is tender and fragrant to build a flavorful base for the sauce.
  2. Add Broth and Gnocchi: Pour in the vegetable broth while stirring to scrape up any browned bits from the pan. Stir in the gnocchi, chopped sun-dried tomatoes, crushed red pepper flakes, kosher salt, and black pepper to combine all the flavorful ingredients evenly.
  3. Simmer Gnocchi: Bring the mixture to a boil, then reduce heat to a simmer. Cover the pan and cook for 5 minutes until the gnocchi becomes tender. This allows the flavors to meld and the gnocchi to cook through perfectly.
  4. Add Greens and Cream: Remove the lid and stir in the chopped baby spinach, cooking for about one minute until wilted. Then stir in the grated Parmesan cheese, heavy whipping cream, and chiffonaded fresh basil. Taste and adjust salt and pepper if necessary to balance the flavors.
  5. Serve: Dish out the creamy gnocchi and top with additional Parmesan cheese, fresh basil leaves, and a sprinkle of crushed red pepper flakes if you want extra heat. Enjoy hot as a comforting and delicious main course.

Notes

  • You can substitute heavy cream with half-and-half or a non-dairy alternative for a lighter or lactose-free version, though the sauce may be less rich.
  • For a vegetarian version, ensure the Parmesan cheese used is free from animal rennet.
  • If you prefer a spicier dish, increase the crushed red pepper flakes to your taste.
  • Use fresh gnocchi or store-bought – cooking times might vary slightly with fresh gnocchi.
  • To add protein, consider tossing in cooked chicken or sautéed mushrooms during step 4.
