Marry Me Chickpeas offers a delightful vegetarian spin on the classic Marry Me Chicken, featuring protein-packed chickpeas simmered in a creamy Italian-style tomato sauce infused with sun-dried tomatoes, garlic, and fresh basil. This easy and flavorful dish comes together in just 15 minutes, making it perfect for a romantic date night or a satisfying weeknight meal.

Ingredients

Base Ingredients

  • 2 Tbsp unsalted butter (28 g)
  • 4 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp oregano
  • ½ tsp crushed red pepper flakes
  • ¼ tsp ground black pepper

Filling Ingredients

  • ½ cup sun-dried tomatoes, roughly chopped
  • 1 cup vegetable broth (236 mL)
  • 2 (15-oz) cans chickpeas, drained (425 g each)

Finishing Ingredients

  • 1 cup heavy cream (can substitute half-and-half)
  • ½ cup grated parmesan cheese
  • 2 Tbsp chopped fresh basil

Instructions

  1. Prepare the Flavor Base: Heat 2 tablespoons of unsalted butter in a large sauté pan or pot over medium heat. Add the minced garlic, salt, oregano, crushed red pepper flakes, and ground black pepper. Cook for approximately 2 minutes until the garlic becomes fragrant and the spices are well incorporated.
  2. Add Fillings: Stir in the roughly chopped sun-dried tomatoes, vegetable broth, and the drained chickpeas. Continue cooking over medium heat, uncovered, for 5 minutes to allow the flavors to meld and the sauce to slightly reduce.
  3. Finish the Dish: Remove the pan from heat and stir in the heavy cream, grated parmesan cheese, and chopped fresh basil. Mix well until the sauce is creamy and evenly coats the chickpeas. Serve warm, ideally with crusty bread to soak up the delicious sauce.

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 7 days.
  • Reheating: Reheat gently in the microwave using 30-second bursts, stirring between intervals until warmed through.
  • Substitution: Half-and-half can be used instead of heavy cream for a lighter sauce.
