This one-pan Marry Me Chicken Pasta is a deliciously creamy and flavorful dish that’s perfect for a quick midweek dinner. Featuring tender chicken pieces, sun-dried tomatoes, and spinach in a rich creamy sauce tossed with pasta, it comes together in about 30 minutes. Ingredients

Chicken and Sauce

  • 650 g (1.4 lb) Boneless & skinless chicken breast, about 4 breasts, cut into bite-sized pieces
  • 1 tbsp Olive oil
  • 3 Garlic cloves, peeled and crushed
  • 170 g (6 oz) Sun dried tomatoes, drained and very finely chopped
  • 1 tsp Oregano
  • 2 tsp Paprika

Pasta and Liquids

  • 250 g (9 oz) Dried pasta
  • 650 ml (2.75 cups) Chicken stock
  • 150 ml (0.75 cups) Double cream

Greens and Cheese

  • 120 g (4 oz) Spinach
  • 50 g (2 oz) Parmesan, grated

Seasonings

  • Freshly ground black pepper

Instructions

  1. Cook the chicken: In a large, deep frying pan, heat the olive oil over medium heat. Once hot, carefully add the chicken pieces along with a good sprinkling of freshly ground black pepper. Cook for about 5 minutes, stirring occasionally, until the chicken is starting to brown on all sides.
  2. Add aromatics and spices: Reduce the heat to low-medium and add the crushed garlic, finely chopped sun-dried tomatoes, oregano, and paprika. Stir everything together and cook for 3-5 minutes, until the garlic is softened and fragrant.
  3. Cook pasta in the sauce: Add the dried pasta and chicken stock to the pan. Stir well to combine and cover with a lid. Let it cook for 15-20 minutes, stirring occasionally, until the pasta is tender and most of the liquid has absorbed into the pasta and chicken.
  4. Finish with spinach and cream: Lower the heat to the lowest setting. Add the spinach and double cream to the pan and stir very well. Cook for 1-3 minutes until the spinach has wilted and the cream is heated through. Ensure the chicken is fully cooked at this point, and adjust seasoning with more salt and pepper if needed.
  5. Add parmesan and serve: Turn off the heat and stir in the grated parmesan until it’s melted and combined, creating a creamy, flavorful finish. Serve hot and enjoy your comforting Marry Me Chicken Pasta.
