Marinated Cucumbers, Onions, and Tomatoes is a light, tangy, and refreshing salad made with fresh vegetables and a simple vinaigrette. Perfect as a healthy side dish for summer meals, barbecues, or picnics.

Ingredients

1 large cucumber, sliced thinly

1 medium red onion, thinly sliced

2 medium tomatoes, cut into wedges or chunks

¼ cup white wine vinegar (or apple cider vinegar)

1 tablespoon olive oil

1 teaspoon sugar (optional)

1 teaspoon dried oregano (or fresh)

Salt and pepper, to taste

Fresh parsley or dill for garnish (optional)

Instructions

  1. Slice the cucumber into thin rounds, onion into rings or half-rings, and tomatoes into wedges or chunks.
  2. In a bowl, whisk together the vinegar, olive oil, sugar (if using), oregano, salt, and pepper to make the marinade.
  3. In a large bowl or container, combine the cucumber, onion, and tomato. Pour the marinade over the vegetables and toss to coat evenly.
  4. Cover and refrigerate for at least 30 minutes to 2 hours to allow the flavors to meld.
  5. Before serving, stir to redistribute the marinade and garnish with fresh parsley or dill if desired.

Notes

Use any vinegar you prefer—apple cider, rice, or balsamic for variety.

For extra flavor, marinate overnight in the refrigerator.

Add crumbled feta or mozzarella for a creamier version.

Spice it up with red pepper flakes or jalapeño slices.

Add bell peppers, olives, or other vegetables for variety.
