Ingredients

2 ripe mangoes, peeled and diced

1/2 red bell pepper, thinly sliced

1/2 cucumber, sliced

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

2 tablespoons lime juice (freshly squeezed)

1 teaspoon honey (optional)

Salt and pepper, to taste

1 tablespoon sesame seeds (optional, for garnish)

Instructions

  1. In a large bowl, combine the diced mango, red bell pepper, cucumber, red onion, and cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, and honey (if using). Season with salt and pepper to taste.
  3. Pour the dressing over the salad and toss gently to combine, ensuring everything is evenly coated.
  4. Garnish with sesame seeds (optional) for an added crunch and serve immediately.

Notes

For extra creaminess, add diced avocado.
