Mango Cucumber Salad is a refreshing and vibrant dish that combines the sweet juiciness of mango with the cool crunch of cucumber, topped with a tangy lime dressing and fresh herbs. It’s perfect for a light snack, side dish, or healthy addition to any meal.

Ingredients

1 large ripe mango, peeled, pitted, and diced

1 large cucumber, peeled and diced

1/2 red onion, thinly sliced

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

1 tablespoon fresh lime juice

1 teaspoon honey (optional)

Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the diced mango, cucumber, and red onion.
  2. Add the chopped cilantro to the bowl and gently toss the ingredients together.
  3. In a small bowl, whisk together the olive oil, lime juice, honey (if using), salt, and pepper until well combined.
  4. Pour the dressing over the mango-cucumber mixture and toss until everything is well coated.
  5. Serve immediately or chill in the refrigerator for 10-15 minutes before serving for an even fresher taste.

Notes

For a creamy twist, add diced avocado to the salad.

If you like a bit of heat, add finely chopped jalapeño or red chili flakes.

Sprinkle toasted sesame seeds, pumpkin seeds, or chopped almonds for extra crunch.

Swap cilantro for basil if you’re not a fan of cilantro.

Store leftovers in an airtight container for 1-2 days, and toss before serving again.
