These no-bake energy bites combine vanilla bean protein powder, oats, poppy seeds, and fresh lemon juice for a refreshing, nutritious treat perfect for on-the-go snacking or a natural energy boost. They are vegan, gluten-free (if using certified oats), and free of dairy and eggs.

  • 3 scoops (90g) PlantFusion vanilla bean protein powder
  • ½ cup (50g) old-fashioned rolled oats (gluten-free if necessary)
  • 1 tbsp (9g) poppy seeds
  • ½ tbsp (7g) Truvia (granular zero-calorie sweetener)
  • 1 tsp freshly grated lemon zest (about one medium lemon)

Wet Ingredients

  • 6 tbsp (90mL) freshly squeezed lemon juice (about two medium lemons)
  • 6 tbsp (90mL) water

Instructions

  1. Combine Dry Ingredients: In a large bowl, mix together the vanilla bean protein powder, old-fashioned rolled oats, poppy seeds, Truvia, and freshly grated lemon zest until evenly distributed.
  2. Add Wet Ingredients: Pour in the freshly squeezed lemon juice and water, then stir thoroughly until all ingredients are fully incorporated into a moist dough.
  3. Shape Energy Bites: Using your hands or a small scoop, form the mixture into 28 small, bite-sized spheres, ensuring they hold together well.
  4. Store and Chill: Place the shaped energy bites into a Tupperware or airtight container. Seal and refrigerate until firm and ready to eat, for up to 6 days.

Notes

  • Protein Powder: Recipe is optimized for PlantFusion vanilla bean protein powder; other plant-based powders may require adjustments in liquid or powder amounts. Do not use whey-based powders as they make the mixture too sticky and prevent proper setting.
  • Oats: Instant or quick-cooking oats can substitute rolled oats, but do not use steel-cut oats.
