Lemon Pizza is a zesty, bright twist on traditional pizza. The combination of a crispy pizza crust with a tangy, creamy lemon sauce, topped with fresh herbs and a touch of cheese, makes for a delightful and refreshing meal. Perfect for when you want something light, yet satisfying, especially during the warmer months!

Ingredients

1 lb pizza dough (store-bought or homemade)

Olive oil, for brushing

For the lemon sauce:

1/2 cup ricotta cheese

1/4 cup heavy cream (or milk for a lighter version)

1 tablespoon lemon juice (freshly squeezed)

1 teaspoon lemon zest

Salt and pepper, to taste

For the toppings:

1 cup shredded mozzarella cheese (or a mix of mozzarella and parmesan)

1/4 cup fresh basil leaves (chopped or whole)

1 tablespoon fresh thyme (optional, for added flavor)

1 tablespoon honey (optional, for a touch of sweetness)

Additional lemon slices for garnish (optional)

Instructions

  1. Prepare the dough: Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet in the oven to heat. Roll out the pizza dough on a floured surface, shaping it to your desired size. Transfer the dough onto a parchment paper for easy handling.
  2. Make the lemon sauce: In a small bowl, mix together the ricotta cheese, heavy cream, lemon juice, lemon zest, salt, and pepper. Stir until smooth and creamy. Adjust the seasoning as needed for a balanced lemon flavor.
  3. Assemble the pizza: Brush olive oil onto the pizza crust. Spread the lemon sauce evenly over the crust, leaving a border for the crust. Sprinkle mozzarella cheese on top of the sauce.
  4. Bake the pizza: Transfer the pizza (with parchment paper) onto the preheated pizza stone or baking sheet. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly. Keep an eye on the pizza to avoid burning the crust.
