Lemon Oatmeal Crumble Bars are a delightful treat combining tangy lemon filling with a sweet and hearty oatmeal crumble topping. These bars are perfect for breakfast, a snack, or dessert, offering a perfect balance of zesty lemon and chewy oatmeal.

Ingredients

For the crust and crumble topping:

1 ½ cups rolled oats

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ cup unsalted butter, softened

½ cup packed brown sugar

2 tablespoons honey or maple syrup

For the lemon filling:

2 large lemons, juiced and zested

1 cup granulated sugar

2 tablespoons all-purpose flour

2 large eggs

1 teaspoon vanilla extract

Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch square baking pan or line it with parchment paper.
  2. In a large bowl, combine the rolled oats, flour, baking powder, and salt. Stir to combine.
  3. In a separate bowl, cream together the softened butter, brown sugar, and honey or maple syrup until smooth.
  4. Gradually add the dry oat mixture to the butter mixture, stirring until combined. The dough should have a crumbly texture.
  5. Reserve about ½ cup of the oat mixture for the crumble topping and press the remaining oat mixture into the bottom of the prepared pan to form the crust.
  6. In a medium bowl, whisk together the lemon juice, lemon zest, granulated sugar, flour, eggs, vanilla extract, and salt until smooth.
  7. Pour the lemon filling evenly over the oat crust.
  8. Sprinkle the reserved crumble topping evenly over the lemon filling.
  9. Bake for 30-35 minutes, or until the top is golden brown and the lemon filling is set.
  10. Let the bars cool in the pan on a wire rack for 10 minutes, then transfer to the refrigerator to cool completely, about 2 hours.
  11. Once cooled, slice into squares or rectangles and serve. Garnish with powdered sugar or extra lemon zest if desired.

Notes

For a fun twist, add berries such as blueberries or raspberries to the lemon filling for extra flavor and color.

Make these bars gluten-free by substituting the all-purpose flour with a gluten-free flour blend.

For extra sweetness, drizzle a simple lemon glaze (powdered sugar mixed with lemon juice) over the bars after they cool.

For a crunchier crust, bake the crust for 5-10 minutes before adding the lemon filling.
