Ingredients

Chia Pudding Base

  • 1/4 cup chia seeds
  • 1/2 cup coconut milk
  • 3/4 cup cottage cheese
  • Zest of 1 lemon
  • 1/4 cup lemon juice
  • 1-2 tbsp maple syrup or honey (depending on desired sweetness)
  • 1 tsp vanilla paste
  • Pinch of turmeric (optional, for colour)

Instructions

  1. Blend the cream mixture: Add the coconut milk, cottage cheese, maple syrup or honey, vanilla paste, lemon juice, lemon zest, and optional turmeric to a high-speed blender. Blend until the mixture is completely smooth and creamy.
  2. Combine with chia seeds: Pour the lemon cream mixture into a bowl containing the chia seeds. Stir thoroughly to ensure the chia seeds are evenly distributed and begin to absorb the liquid.
  3. Chill and set: Cover the bowl and refrigerate the mixture for at least 2 hours, preferably overnight. This allows the chia seeds to swell and the pudding to thicken to a creamy consistency.
  4. Serve and enjoy: Once set, serve the lemon chia pudding with your favourite toppings such as fresh fruit, nuts, or granola for added texture and flavor.
