Lemon Butter Salmon with Crispy Potatoes & Broccoli is a delicious one-pan meal featuring flaky, flavorful salmon, crispy golden potatoes, and tender broccoli, all drizzled with a tangy lemon butter sauce. Perfectly balanced in flavors and textures, this dish is easy to prepare and ideal for a weeknight dinner or special occasion.

Ingredients

4 salmon fillets (skin on or off, as preferred)

2 tablespoons olive oil

1 tablespoon lemon juice (fresh or bottled)

2 tablespoons unsalted butter, melted

2 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon dried thyme (or fresh thyme, if preferred)

Lemon slices, for garnish (optional)

4 medium-sized potatoes, cut into bite-sized cubes

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 large head of broccoli, cut into florets

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.
  2. Prepare the Potatoes: In a bowl, toss the cubed potatoes with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
  3. Roast the Potatoes: Spread the seasoned potatoes on the prepared baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until crispy and golden brown, flipping them halfway through cooking.
  4. Prepare the Broccoli: While the potatoes are roasting, toss the broccoli florets with olive oil, salt, and pepper.
  5. Roast the Broccoli: After the potatoes have been in the oven for 15-20 minutes, add the broccoli to the baking sheet (alongside the potatoes) and roast for another 10-12 minutes, until tender and slightly crispy on the edges.
  6. Prepare the Salmon: While the potatoes and broccoli are roasting, prepare the salmon. Place the salmon fillets on a separate baking sheet or add them to the same sheet as the vegetables, if space allows.
  7. Season the Salmon: Drizzle the salmon fillets with olive oil and lemon juice. Then, brush with the melted butter and sprinkle with minced garlic, thyme, salt, and pepper.
  8. Bake the Salmon: Bake the salmon in the oven (you can add it to the oven when the potatoes are about halfway done roasting) for 12-15 minutes, or until the salmon flakes easily with a fork. If you like crispy edges, you can broil the salmon for an additional 2-3 minutes at the end of the cooking time.
  9. Serve: Once the potatoes, broccoli, and salmon are done, plate the meal by serving the crispy potatoes, roasted broccoli, and a salmon fillet. Drizzle any extra lemon butter sauce from the pan over the salmon and vegetables for added flavor. Garnish with lemon slices for extra freshness and a pop of color.

Notes

Add More Vegetables: Feel free to add other vegetables like carrots, asparagus, or green beans. Just toss them with olive oil and seasoning, and roast them alongside the broccoli and potatoes.
