Lavender Lemonade is a fragrant and refreshing beverage perfect for spring and summer gatherings like baby showers, wedding showers, and BBQs. It blends aromatic dried lavender with fresh lemon juice and a touch of sweetness from sugar and honey, resulting in a beautifully floral and crisp drink that can be served over ice and garnished with lemon slices.

Ingredients

Lavender Syrup

  • 2 cups water (480 ml)
  • ½ cup granulated sugar (100 grams)
  • ¼ cup honey (88 grams)
  • 3 tablespoons dried culinary lavender (8 grams), plus more for garnish

Lavender Lemonade

  • 2 cups freshly squeezed lemon juice (from 10-12 lemons, approximately 454 grams)
  • 4 cups water (960 ml)
  • Blue or purple food coloring (optional, to enhance color)
  • Lemon slices (optional, for garnish)

Instructions

  1. Prepare the Lavender Syrup: In a saucepan over medium heat, combine 2 cups of water and the granulated sugar. Bring the mixture to a boil, stirring occasionally, until the sugar has fully dissolved. Remove from heat and stir in the honey and dried culinary lavender. This infuses the syrup with the lavender’s aromatic flavor.
  2. Steep the Lavender: Allow the lavender syrup mixture to steep for 2 hours at room temperature to extract a deep lavender flavor. You may steep for a shorter time if you prefer a milder lavender taste.
  3. Strain the Syrup: After steeping, strain the syrup using a fine mesh sieve or cheesecloth, pressing the lavender blossoms to extract all of the infused liquid. Discard the solids, reserving the fragrant lavender syrup.
  4. Combine the Lemonade: In a large pitcher, combine the freshly squeezed lemon juice, the lavender syrup, and the remaining 4 cups of water. Stir well to mix all ingredients evenly.
  5. Add Color and Serve: Optionally, add a few drops of blue or purple food coloring to enhance the beautiful color of the lemonade. Serve the lavender lemonade over ice and garnish with lemon slices and additional dried lavender for a decorative touch.
