These refreshing Key Lime Energy Bars are a quick and nutritious snack made with whole almonds, raw cashews, shredded coconut, and zesty lime. Naturally sweetened with dates, they provide a perfect balance of tangy lime flavor and nutty texture, ideal for on-the-go energy boosts or post-workout refueling.

Ingredients

Dry Ingredients

  • 20 pitted Deglet dates (or 10 Medjool dates, pitted)
  • ¾ cup whole almonds
  • ¾ cup raw cashews
  • ¼ cup unsweetened shredded coconut
  • Pinch of fine salt

Fresh Ingredients

  • Zest of 2 limes (2 teaspoons)
  • Juice of 1 medium lime (2 tablespoons)

Instructions

  1. Combine Ingredients: Place all ingredients into the bowl of a food processor, ensuring the dates are pitted to avoid any pits in the mixture.
  2. Process Mixture: Pulse the food processor until the mixture becomes crumbly but still holds together well when pinched between your fingers, indicating the right consistency.
  3. Adjust Dryness: If the mixture feels too dry and crumbly, add another date and process again for added moisture, or add one teaspoon of water at a time until the mixture binds properly.
  4. Adjust Wetness: If the mixture is too wet and sticky, incorporate 2 tablespoons of additional nuts at a time and process until the mixture is moist but holds together well.
  5. Form Bars or Balls: Press the mixture onto a parchment paper-lined baking sheet, shaping it into a 9 x 9 inch square. Alternatively, roll the mixture between your hands to form 16 energy balls. If the mixture feels sticky, place it in the refrigerator to chill and firm up.
  6. Slice and Store: Cut the formed square into 12 bars. Wrap each bar in parchment paper and store in a covered container in the refrigerator for up to 1 week or freeze in a freezer-safe container for up to 2 months.
