A bright, tangy Japanese-style ginger dressing packed with fresh ginger flavor, perfectly balancing sharpness, sweetness, and umami. Ideal for salads, grilled vegetables, or as a marinade.

Ingredients

1/4 cup grated fresh ginger (about 2 tablespoons)

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon mirin (sweet rice wine)

1 tablespoon sesame oil

1 tablespoon vegetable oil (or neutral oil)

1 tablespoon honey or sugar

1 tablespoon finely chopped green onions (optional)

Instructions

  1. Grate fresh ginger finely to get about 2 tablespoons.
  2. In a bowl, whisk together soy sauce, rice vinegar, mirin, sesame oil, vegetable oil, and honey until sugar dissolves.
  3. Stir in grated ginger and chopped green onions if using.
  4. Let the dressing sit for at least 10 minutes to allow flavors to meld.
  5. Give it a quick stir before drizzling over salads or using as desired.

Notes

Makes about 3/4 cup of dressing, enough for 4–6 servings.

Variations: add grated garlic for extra punch, substitute lime juice for rice vinegar, blend for smoother texture, or toss in toasted sesame seeds.

Store refrigerated in an airtight container up to 1 week; shake or stir before use.

Do not heat; best served cold or room temperature.
