This Italian Herb Rice recipe is a fragrant and flavorful side dish featuring jasmine rice cooked perfectly in chicken broth with fresh and dried Italian herbs. Butter and fresh parsley add richness and a burst of vibrant color, making it an ideal accompaniment for a variety of meals.

Ingredients

Main Ingredients

  • 2 cups Jasmine rice
  • 4 cups chicken stock or broth
  • 1½ teaspoons chopped fresh basil (or ½ teaspoon dried basil)
  • 1½ teaspoons chopped fresh thyme (or ½ teaspoon dried thyme)
  • 1½ teaspoons chopped fresh oregano (or ½ teaspoon dried oregano)
  • 1-2 tablespoons butter
  • 1 teaspoon kosher salt (reduce if using store-bought broth)
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh Italian parsley

Instructions

  1. Combine Ingredients: In a large saucepan, combine the jasmine rice, chicken stock, and any dried herbs (basil, thyme, oregano). Stir to mix evenly and place the pan over high heat to bring the mixture to a boil.
  2. Simmer the Rice: Once boiling, reduce the heat to low and cover the saucepan with a lid. Let it simmer gently for about 16 minutes, allowing the rice to absorb all the liquid and become tender.
  3. Add Fresh Herbs and Butter: Remove the saucepan from heat. Stir in the fresh basil, thyme, and oregano if you are using fresh herbs. Then add 1 to 2 tablespoons of butter and fluff the rice gently with a fork to combine everything evenly.
  4. Season and Garnish: Taste the rice and adjust seasoning with additional salt and freshly ground black pepper if needed. Finally, sprinkle the chopped fresh Italian parsley over the top just before serving for a fresh, colorful finish.

Notes

  • Use low-sodium chicken broth to better control the salt level in the dish.
  • For a vegetarian version, substitute chicken stock with vegetable broth.
  • Make sure to fluff the rice with a fork rather than stirring vigorously to keep the grains separated.
  • Fresh herbs provide a brighter flavor, but dried herbs work well if fresh are not available.
  • Butter adds richness, but can be reduced or replaced with olive oil for a lighter version.
