Honey Garlic Meatball Rice Bake is a one-pan comfort dish made with juicy meatballs, fluffy rice, and a sweet and savory honey garlic sauce. Perfect for busy weeknights, it’s satisfying, easy, and delicious.

Ingredients

1 lb ground beef (or ground turkey/chicken)

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 tablespoon parsley, chopped (optional)

Salt and pepper, to taste

1 cup long-grain white rice

2 cups chicken broth (or vegetable broth)

1/4 cup honey

3 tablespoons soy sauce

2 tablespoons olive oil

1 tablespoon minced garlic

1 teaspoon ground ginger (optional)

1/2 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (optional, for garnish)

Sesame seeds (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix ground meat, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper. Form into 16–18 meatballs and place in the dish.
  3. In a small saucepan, heat olive oil. Sauté garlic for 1–2 minutes. Add honey, soy sauce, broth, ginger, and red pepper flakes. Simmer for 3–4 minutes.
  4. Pour half the sauce over the meatballs. Sprinkle uncooked rice evenly over the dish. Pour the remaining sauce over the rice. Season with salt and pepper.
  5. Cover the dish with foil and bake for 35–40 minutes. Uncover for the last 10 minutes to crisp the top slightly.
  6. Remove from oven, let rest for a few minutes, garnish with parsley and sesame seeds, and serve hot.

Notes

Use plant-based meatballs for a vegetarian version.

Add vegetables like bell peppers, broccoli, or peas for more nutrition.

Adjust cooking time and liquid if using brown rice.

Make the sauce spicier by adding more red pepper flakes or sriracha.
