Ingredients

Dough

  • 2 whole Refrigerated Pre-made Pie Crusts

Filling

  • 1/2 cup Fruit Jam, any variety
  • 1 tbsp Cornstarch

Egg Wash

  • 1 Egg

Icing

  • 1 cup Powdered Sugar
  • 1 tbsp Heavy Cream (or more as needed)
  • 1 tbsp Fruit Jam (for icing)
  • Sprinkles, for decorating

Instructions

  1. Prepare the Filling: In a small bowl, mix the fruit jam with cornstarch until well combined. This will help thicken the filling and prevent it from leaking out during baking.
  2. Roll out Pie Crusts: On a lightly floured surface, gently roll out both pie crusts to smooth and slightly enlarge them. Cut each rolled crust into equal-sized rectangles, typically about 3×4 inches, to form the pop tart bases and tops.
  3. Fill the Pop Tarts: Spoon about one tablespoon of the jam mixture onto the center of half of the rectangles, spreading it evenly but leaving a border around the edges. Lightly brush the edges with beaten egg for sealing.
  4. Seal the Pop Tarts: Place the remaining rectangles on top of the jam-filled pieces. Press the edges together with a fork to seal firmly and prevent the filling from oozing out.
  5. Apply Egg Wash: Brush the tops of the sealed pop tarts with the beaten egg to ensure a golden and shiny finish after baking. Use a fork to poke a few small holes on the top crust to allow steam to escape.
  6. Bake: Arrange the pop tarts on a parchment-lined baking sheet and bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until golden brown and puffed.
  7. Prepare the Icing: While the pop tarts bake, whisk together powdered sugar, heavy cream, and 1 tablespoon of fruit jam until smooth. Adjust the consistency with extra cream if necessary.
  8. Cool and Decorate: Allow the pop tarts to cool completely on a wire rack. Once cooled, drizzle or spread the icing on top and sprinkle with colorful sprinkles for a festive touch.
