A healthier, oven-baked version of KFC-style chicken, with crispy skin and tender meat, made at home with simple ingredients and minimal effort.

Ingredients

  • 10 pieces of chicken (drumsticks, thighs, or wings)
  • 2 cups all-purpose flour
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon ground mustard
  • 1 teaspoon cayenne pepper (optional, for a kick)
  • 1 cup buttermilk
  • 2 tablespoons olive oil (for greasing)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the chicken by patting it dry with paper towels.
  3. In a large bowl, mix together the flour, salt, pepper, paprika, garlic powder, onion powder, thyme, oregano, mustard, and cayenne pepper.
  4. In a separate bowl, pour the buttermilk.
  5. Dip each piece of chicken first into the buttermilk, then coat thoroughly with the seasoned flour mixture.
  6. Arrange the coated chicken pieces on a baking rack set over a baking sheet. Drizzle the chicken with olive oil to help with crisping.
  7. Bake in the preheated oven for 35-40 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
  8. Remove from the oven and let the chicken rest for a few minutes before serving.
