These homemade ground chicken nuggets are a delicious and healthier alternative to traditional fried nuggets. Made with a blend of ground chicken, parmesan, and flavorful seasonings, they are coated in a seasoned breadcrumb mixture and baked or air fried to crispy perfection. Perfect for a quick snack, appetizer, or meal served with your favorite dipping sauces.

Ingredients

Nuggets

  • 1 lb ground chicken
  • 1/4 cup grated parmesan cheese
  • 1/4 cup breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Nonstick cooking spray (preferably avocado oil spray)

Breading

  • 2 eggs
  • 1 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Preheat: Preheat your oven to 400°F and line a baking sheet with parchment paper or preheat your air fryer to 400°F and spray the basket with nonstick spray.
  2. Mix Nugget Ingredients: In a large bowl, combine ground chicken, grated parmesan, breadcrumbs, garlic powder, onion powder, salt, and pepper until the mixture is well blended.
  3. Shape Nuggets: Form the mixture into approximately 16 nugget shapes and arrange them on a tray. Freeze them for at least 10 minutes to help them set and hold their shape during cooking.
  4. Prepare Breading: While nuggets freeze, whisk the eggs in a bowl. In a separate bowl, mix together breadcrumbs, grated parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper.
  5. Coat Nuggets: After freezing, dip each nugget into the egg wash, coating both sides, then immediately press into the breadcrumb mixture until evenly coated. Place coated nuggets on the baking sheet or directly in the air fryer basket.
  6. Cook Nuggets: Spray the nuggets with nonstick baking spray. For oven baking, bake for 8 minutes, then flip the nuggets, spray again, and bake for another 8 minutes until golden brown. For air frying, cook for 6 minutes, flip and spray, then cook for an additional 6 minutes until crispy and golden.
  7. Serve: Serve your homemade chicken nuggets hot with your favorite dipping sauces like ketchup, barbecue sauce, or buffalo sauce. You can also toss them in sauce for added flavor.

Notes

  • Freezing the nuggets before breading helps them hold their shape while cooking.
  • You can use gluten-free breadcrumbs to make this recipe gluten-free if desired.
  • Adjust seasoning in the breading mix to taste, adding more smoked paprika for extra smokiness.
  • Avocado oil spray is preferred for a healthier cooking oil option, but any nonstick cooking spray works.
  • If air frying, make sure not to overcrowd the basket for even cooking and crispiness.
  • These nuggets can be reheated in the oven or air fryer for best texture.
