Homemade Cheesy Beef & Vegetable Casserole is a hearty, comforting meal that combines savory ground beef, tender vegetables, and melted cheese in one deliciously baked dish. Perfect for weeknights, it’s warm, filling, and comes together quickly with minimal cleanup.

Ingredients

1 lb ground beef

2 cups cabbage, thinly sliced

1 medium onion, diced

1 cup mushrooms, sliced

1 cup tomato sauce

1 cup shredded mozzarella cheese

1 tsp smoked paprika

1/2 tsp black pepper

1/2 tsp salt

1/2 tsp garlic powder

1/4 tsp ground ginger (optional)

1/4 tsp turmeric (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, sauté the diced onions over medium heat until softened.
  3. Add the ground beef and cook until browned.
  4. Stir in the sliced mushrooms and cook until tender.
  5. Season with smoked paprika, black pepper, salt, garlic powder, and optional ginger and turmeric.
  6. Pour in the tomato sauce and mix well to combine.
  7. Add the sliced cabbage and stir until well incorporated.
  8. Transfer the mixture to a baking dish and sprinkle shredded mozzarella cheese on top.
  9. Bake for about 15 minutes, or until the cheese is melted and bubbly.

Notes

Use bell peppers or zucchini instead of cabbage for variety.

Add chili flakes for a spicy kick.

Swap mozzarella with cheddar or pepper jack for a different flavor profile.
