Healthy Pancake Cereal is a fun and nutritious twist on traditional pancakes, featuring tiny, bite-sized pancakes made with wholesome ingredients including almond milk, whole wheat flour, and ripe banana. Perfect for a playful breakfast or brunch, it’s topped with fresh berries, sliced banana, and optional whipped cream and sprinkles for extra flavor and texture.

Ingredients

Batter Ingredients

  • 1 cup 1% milk (buttermilk or almond milk)
  • 1 cup unbleached all-purpose or whole wheat flour
  • 1 ripe banana
  • 2 large eggs
  • 1 teaspoon oil
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Cooking

  • Cooking spray or oil for pan

Toppings

  • 1 cup fresh mixed berries
  • 1 large banana, sliced
  • Optional whipped cream
  • Optional colored sprinkles

Instructions

  1. Prepare the batter: Add milk, flour, one ripe banana, eggs, oil, vanilla, baking powder, and salt to a blender. Pulse until the mixture is smooth and thoroughly combined, ensuring a well-mixed pancake batter.
  2. Transfer batter to squeeze bottle: Pour the pancake batter into a condiment squeeze bottle for ease of creating small pancake dots. Alternatively, use a ziplock bag with a small hole cut in one corner to squeeze the batter.
  3. Preheat the pan: Heat a frying pan over medium-high heat and lightly spray or grease it with cooking spray or oil to prevent sticking.
  4. Cook mini pancakes: Squeeze small dots of pancake batter the size of a nickel onto the hot pan. Cook until the tops become dry and bubbles form, signaling it’s time to flip.
  5. Flip and cook further: Use a spatula to toss or flip the mini pancakes and cook for a few more minutes until slightly browned.
  6. Toss pancakes to cook evenly: Occasionally toss the pancakes around in the pan to ensure even cooking and browning on all sides.
  7. Serve with toppings: Transfer the cooked mini pancakes to four bowls. Add sliced bananas, fresh mixed berries, and any other desired toppings such as honey drizzle, whipped cream, or colored sprinkles to complete the cereal experience.
