  • 1 1/3 cup almond flour
  • 1 cup natural peanut butter

  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Mix the Base: In a bowl, combine almond flour, natural peanut butter, salt (if using unsalted peanut butter), maple syrup, and vanilla extract until fully incorporated and smooth.
  2. Form the Balls: Roll the mixture into small, bite-sized balls. Place them on a tray and refrigerate for 30 minutes to firm up.
  3. Melt the Chocolate: In a small bowl, melt the chocolate chips and coconut oil together in 30-second increments in the microwave, stirring in between until smooth.
  4. Dip the Buckeyes: Using a fork, dip each chilled ball into the melted chocolate, covering about two-thirds of the ball. Allow excess chocolate to drip off, then place them back on the tray.
  5. Chill Again: Refrigerate the chocolate-dipped buckeyes for at least 15 minutes to set the chocolate coating.
  6. Store Properly: Keep the buckeyes stored in the refrigerator until ready to serve to maintain freshness and firmness.
