Ingredients

Chicken and Marinade

  • 4 boneless, skinless chicken thighs (1.25 lb.)
  • ¼ cup fresh lime juice
  • 3 tablespoons honey
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon freshly cracked black pepper

Garnish

  • 2 tablespoons fresh cilantro, minced

Instructions

  1. Preheat the Grill: Preheat your grill to 375°F to ensure it’s hot and ready for cooking. Gather and prepare all ingredients before starting.
  2. Marinate the Chicken: In a ziplock bag or bowl, combine chicken thighs with lime juice, honey, vegetable oil, garlic powder, paprika, cumin, chili powder, dried oregano, salt, and black pepper. Seal the bag and gently massage it to evenly coat the chicken. Let it marinate for 30 minutes to allow the flavors to penetrate.
  3. Grill the Chicken: Once the grill is properly heated, place the marinated chicken thighs on the grill grates. Cook for 6-7 minutes on the first side.
  4. Flip and Continue Cooking: Use tongs to flip the chicken thighs, then grill for an additional 6-7 minutes, or until the internal temperature reaches 165°F to ensure it is fully cooked and safe to eat.
  5. Serve: Remove the chicken from the grill and place on serving plates or a platter. Sprinkle the minced fresh cilantro over the top for a burst of fresh flavor and serve immediately.

Notes

  • Marinating for at least 30 minutes maximizes flavor, but you can marinate up to 2 hours for more depth.
  • Use a meat thermometer to check doneness and prevent undercooking or drying out the chicken.
  • Boneless, skinless chicken thighs provide a tender, juicy result, but you can use bone-in thighs with adjusted cooking time.
  • Adjust chili powder and honey according to your heat and sweetness preference.
  • This recipe works well on a gas or charcoal grill.
