These Greek Yogurt Brownies are a deliciously moist and healthier twist on classic brownies, made with protein-rich Greek yogurt and sugar-free chocolate chips. Ingredients

Chocolate Mixture

  • 2/3 cup Sugar-Free Chocolate Chips (divided)
  • 1 teaspoon Coconut Oil

Wet Ingredients

  • 3/4 cup Plain Greek Yogurt
  • 1 large Egg
  • 1/4 cup Almond Milk (or soy milk, or any milk of choice)
  • 1 teaspoon Vanilla Extract

Dry Ingredients

  • 1/2 cup Granulated Sweetener (sugar-free brown erythritol or coconut sugar or brown sugar)
  • 1/2 cup Oat Flour (or all-purpose flour, lightly packed, swept)
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C) to ensure it’s at the right temperature for baking the brownies evenly.
  2. Prepare Pan: Line an 8-inch x 8-inch brownie pan with parchment paper and lightly oil it to prevent the brownies from sticking.
  3. Melt Chocolate: In a microwave-safe bowl, combine 1/3 cup of the sugar-free chocolate chips and 1 teaspoon of coconut oil. Microwave until melted, then set aside to cool to room temperature.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the oat flour, unsweetened cocoa powder, granulated sweetener, baking powder, and salt until well combined.
  5. Combine Wet Ingredients: In a large bowl, whisk the plain Greek yogurt, egg, vanilla extract, almond milk, and the cooled melted chocolate mixture until smooth and combined.
  6. Incorporate Dry Ingredients: Sift the dry ingredient mixture into the wet ingredients. Gently fold together using a silicone spatula until just combined to avoid overmixing.
  7. Add Remaining Chocolate Chips: Stir in the remaining 1/3 cup of chocolate chips evenly throughout the batter for extra chocolatey bites.
  8. Pour Batter into Pan: Transfer the batter to the prepared pan and spread it out evenly with a spatula.
  9. Bake: Bake in the preheated oven for 20-23 minutes, or until a toothpick inserted in the center comes out clean, indicating the brownies are cooked through.
