Ingredients

Sauce

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 (14 ounce) can diced tomatoes, with juices
  • 2 tablespoons tomato paste
  • 1/4 cup chicken broth
  • 1/4 teaspoon Italian seasoning

Main

  • 1 pound uncooked potato gnocchi
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup freshly grated parmesan cheese
  • Small handful fresh basil, torn or sliced
  • Salt and pepper, to taste

Instructions

  1. Heat the Oil and Butter. Add the olive oil and butter to a deep skillet over medium heat. Once hot, add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  2. Prepare the Tomato Sauce. Add the diced tomatoes with their juices, tomato paste, chicken broth, and Italian seasoning to the skillet. Stir well to combine all the sauce ingredients.
  3. Cook the Gnocchi. Stir in the uncooked potato gnocchi. Let the gnocchi cook in the sauce, stirring frequently to prevent sticking, for about 5 to 7 minutes until the gnocchi are cooked through and the sauce thickens as the starch is released.
  4. Add Cheese and Basil. Taste the gnocchi to check for doneness. Once cooked, stir in the shredded mozzarella, grated parmesan, and fresh basil until the cheeses melt into the sauce.
  5. Season and Serve. Season with salt and pepper to taste. Serve immediately while hot and enjoy this flavorful Italian-inspired dish.

Notes

  • Stir frequently when cooking the gnocchi to avoid sticking or burning.
  • Use fresh basil for the best flavor, but dried Italian herbs can be substituted if necessary.
  • For a vegetarian version, substitute vegetable broth for the chicken broth.
  • Gnocchi cooks quickly; watch closely and do not overcook to maintain texture.
