Ingredients

1 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp ground ginger

1/2 tsp ground cinnamon

1/4 tsp ground cloves

1/4 tsp salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1 large egg

3/4 cup molasses

1/2 cup hot water

1/2 tsp vanilla extract

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract

Pinch of salt (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch square or round cake pan.
  2. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a large mixing bowl, cream the butter and brown sugar until light and fluffy.
  4. Add the egg and mix well, then beat in molasses and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Slowly mix in the hot water until the batter is smooth and slightly runny.
  7. Pour into prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  8. Cool cake in pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, then vanilla and salt, and beat until fluffy.
  10. Frost cooled cake and optionally garnish with ground cinnamon or nutmeg before serving.

Notes

Add orange or lemon zest to the frosting for a citrusy twist.

For a gluten-free version, use a 1:1 gluten-free flour blend.

Garnish with chopped walnuts or pecans for added texture.

Store in the refrigerator and bring to room temperature before serving.
