A savory and moist Garlic Parmesan Chicken Meatloaf made with ground chicken, Italian breadcrumbs, plenty of garlic, and Parmesan cheese, baked to golden perfection and topped with extra cheese and fresh parsley for a delicious twist on a classic comfort dish.

Ingredients

Meatloaf Mixture

  • 1 ½ pounds ground chicken
  • ¾ cup Italian breadcrumbs (or plain)
  • ½ cup grated Parmesan cheese
  • ⅓ cup minced yellow onion
  • 4 cloves minced garlic
  • 1 large egg
  • ¼ cup whole milk
  • 3 tablespoons chopped parsley (divided: 2 tbsp for mixture, 1 tbsp for topping)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Topping

  • ½ cup shredded Parmesan cheese
  • 1 tablespoon fresh chopped parsley

Instructions

  1. Prepare the Pan: Preheat your oven to 350°F (175°C) and spray a 9×5×2-inch loaf pan with nonstick cooking spray to ensure the meatloaf doesn’t stick during baking.
  2. Combine Ingredients: In a large mixing bowl, add the ground chicken, Italian breadcrumbs, grated Parmesan cheese, minced yellow onion, minced garlic, egg, whole milk, 2 tablespoons of chopped parsley, salt, and black pepper.
  3. Mix Thoroughly: Using clean hands or a large spoon, blend all the ingredients together well until fully combined. This ensures an even distribution of flavors and a cohesive meatloaf.
  4. Shape the Meatloaf: Form the mixture into a loaf shape and place it into the prepared loaf pan. Evenly sprinkle the shredded Parmesan cheese on top and garnish with the remaining tablespoon of fresh chopped parsley.
  5. Bake: Place the loaf pan in the preheated oven and bake for 1 hour, allowing the meatloaf to cook through and develop a firm texture.
  6. Broil for Finish: For the last 2 minutes of baking, switch the oven to broil mode to brown the top of the meatloaf, creating a golden, slightly crispy crust. Watch closely to avoid burning.
  7. Rest and Serve: Remove from the oven and let the meatloaf rest for 5-10 minutes before slicing to allow juices to redistribute for moist, flavorful servings.

Notes

  • You can substitute Italian breadcrumbs with plain breadcrumbs if desired.
  • Make sure not to overmix the meat to avoid a dense meatloaf texture.
  • Let the meatloaf rest after baking for best slicing results.
  • For a lower fat version, use low-fat milk instead of whole milk.
  • Adding fresh herbs like parsley enhances flavor but can be adjusted to taste.
