Ready in just 15 minutes with minimal ingredients and no grill or marinade needed, this recipe delivers tender steak bites bursting with rich garlic butter goodness.

Ingredients

Steak Bites

  • pound sirloin steak cut into bite size pieces (or strip loin, tenderloin, strip steak, or rib eye)
  • 1 tablespoon olive oil
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon pepper (or to taste)

Garlic Butter Sauce

  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat the skillet: Add the olive oil to a large skillet and heat over high heat until very hot.
  2. Sear the steak bites: Season the steak pieces generously with salt and pepper. Add them to the hot skillet and cook without stirring for about 2 minutes to develop a golden crust.
  3. Continue cooking: Stir the steak bites and cook an additional 2 minutes until they are nicely browned on all sides. If your skillet is small, cook the steak in batches to avoid overcrowding.
  4. Remove steak and prepare garlic butter: Transfer the cooked steak bites to a plate. Lower the heat to medium, add the butter to the same skillet, and let it melt.
  5. Add garlic and red pepper flakes: Stir in the minced garlic and red pepper flakes, cooking for about 30 seconds until the garlic becomes aromatic and slightly browned. Be careful not to burn the garlic.
  6. Toss and garnish: Pour the garlic butter sauce over the steak bites, tossing well to coat. Garnish with chopped fresh parsley and serve immediately.

Notes

  • Pat the steak dry before cooking for a better crust, as moisture prevents searing.
  • Use a very hot pan and avoid stirring the steak too soon to get a good sear.
  • Add garlic only after the steak is cooked to prevent it from burning.
  • Don’t overcrowd the pan; cook steak bites in batches if necessary.
  • Red pepper flakes are optional but add a nice subtle heat.
