Ingredients

Chicken

  • lb boneless skinless chicken breasts or chicken thighs, cut into bite sized pieces
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ⅛ teaspoon paprika

Cooking Fats and Flavor

  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, divided
  • 1½ tablespoons minced fresh garlic (about 4 cloves)
  • 2 tablespoons finely chopped fresh parsley

Instructions

  1. Preheat the skillet: Place a large non-stick skillet over medium-high heat and allow it to get hot.
  2. Season the chicken: In a bowl, toss the chicken pieces with Italian seasoning, salt, pepper, and paprika until evenly coated.
  3. Add fats to skillet: Add 1 tablespoon of olive oil and 1 tablespoon of butter to the hot skillet; tilt the pan to evenly coat the surface.
  4. Cook the chicken in a single layer: Add the seasoned chicken pieces in an even, single layer without overcrowding, allowing them to brown rather than steam.
  5. Sear the chicken: Cook the chicken pieces until nicely golden brown on the bottom, about 3 minutes, then flip and cook the opposite side for 2 more minutes until nearly cooked through. Cook in batches if needed.
  6. Add remaining butter, garlic, and parsley: Stir in the remaining 2 tablespoons of butter along with the minced garlic and chopped parsley. Simmer and cook the chicken bites for an additional 1 minute or until cooked through, scraping the skillet bottom to release flavorful browned bits.
