Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 1/2 teaspoon salt
  • 2 tablespoons minced chives, plus extra for garnish
  • 1 tablespoon finely chopped parsley, plus extra for garnish

Wet Ingredients

  • 1 1/4 cup plain, full-fat Greek yogurt
  • 1/4 cup olive oil
  • 3 cloves garlic, pressed through garlic press
  • 1/4 cup water

Instructions

  1. Prepare Ingredients: Gather and measure all ingredients as listed to ensure a smooth cooking process.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, and salt until well combined. Add in the minced chives and chopped parsley and mix to evenly distribute the herbs.
  3. Add Wet Ingredients: Stir in the Greek yogurt. In a small bowl or cup, mix olive oil and pressed garlic together with a fork, then pour into the flour mixture along with the water.
  4. Form Dough: Use a wooden spoon or rubber spatula to combine ingredients until a soft, moist dough forms. There is no need to knead; just ensure all ingredients are well incorporated.
  5. Portion Dough: Transfer the dough onto a lightly floured surface and divide into six equal pieces, approximately 4 1/2 ounces each. Shape each piece into a ball.
  6. Shape Flatbreads: Take one dough ball and press it gently into a rustic 6 to 7 inch flatbread shape. Place each shaped flatbread on a parchment-lined baking sheet as you go.
  7. Cook Flatbreads: Heat a non-stick skillet over medium heat. Brush one side of a flatbread with olive oil and place it in the hot skillet. Cook for about 1 minute 30 seconds until deep golden-brown. Brush the top side with olive oil, flip, and cook the other side for 1 minute 15 to 30 seconds until golden-brown. Repeat for all flatbreads.
  8. Finish and Serve: Optionally brush flatbreads with additional olive oil and sprinkle with extra parsley and chives for garnish. Serve warm or at room temperature.

Notes

  • Do not knead the dough to keep it tender and soft.
  • The cooking time may vary slightly depending on your skillet and heat source.
  • For an extra garlic flavor, add more pressed garlic or garlic powder to the dough.
  • Serve flatbreads with dips like hummus, tzatziki, or use as sandwich bread.
  • Store leftovers wrapped in foil or airtight container at room temperature for up to 2 days.
