Fruity Pebbles Cheesecake Tacos are a colorful, fun, and indulgent dessert combining crispy taco shells with creamy cheesecake filling and a burst of fruity, sweet Fruity Pebbles cereal. These playful tacos are perfect for any occasion.

Ingredients

6 flour tortillas (small size)

1/4 cup unsalted butter, melted

1/4 cup sugar

1/4 cup Fruity Pebbles cereal (crushed slightly for coating)

8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup heavy cream

1/4 cup Fruity Pebbles cereal (for mixing into the cheesecake filling)

1/4 cup Fruity Pebbles cereal (for garnish)

Whipped cream (optional, for extra indulgence)

Instructions

  1. Preheat your oven to 350°F (175°C). Brush both sides of the tortillas with melted butter. In a small bowl, mix together the sugar and crushed Fruity Pebbles cereal. Dip each tortilla in the mixture, pressing gently to coat both sides evenly.
  2. Drape the coated tortillas over the edges of a baking sheet or a taco shell holder. Bake for 8-10 minutes, or until the tortillas are golden and crispy.
  3. Remove the taco shells from the oven and let them cool completely while you prepare the cheesecake filling.
  4. In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Slowly add the heavy cream and beat until the mixture becomes thick and smooth, similar to a traditional cheesecake filling.
  5. Gently fold in the Fruity Pebbles cereal into the cheesecake mixture.
  6. Once the taco shells have cooled, carefully spoon the cheesecake filling into each taco shell, filling them generously.
  7. Sprinkle additional Fruity Pebbles cereal on top of the filled tacos for added crunch and color. Optionally, top with whipped cream and extra Fruity Pebbles before serving.

Notes

You can try using other cereals like Cocoa Pebbles or Trix for different flavors and colors.

If you want an added twist, mix in lemon zest or strawberry puree into the cheesecake filling.

For extra indulgence, drizzle some melted chocolate or Nutella over the filled tacos.

Store leftover taco shells and cheesecake filling separately for up to 2 days in airtight containers. Assemble the tacos just before serving.
