Ingredients

8 slices of bread (white, brioche, or challah work well)

1/4 cup butter, melted (for brushing)

For Coating:

1/4 cup granulated sugar

1/2 teaspoon cinnamon

Instructions

  1. For the cheesecake filling, beat together the softened cream cheese, powdered sugar, vanilla extract, and heavy cream until smooth and creamy. Set aside.
  2. Assemble the sandwiches by spreading a generous amount of cheesecake filling onto one slice of bread. Top with sliced strawberries or strawberry preserves. Place a second slice of bread on top to form a sandwich. Repeat with the remaining bread, filling, and strawberries.
  3. In a shallow bowl, mix the granulated sugar and cinnamon. Set aside.
  4. Heat a skillet or frying pan over medium heat and brush with melted butter.
  5. Dip each sandwich into the melted butter, coating both sides, then place the sandwich in the skillet and cook for 2-3 minutes per side, or until golden brown and crispy.
