Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 cup uncooked long-grain white rice
  • 1 can (10.5 oz) French onion soup
  • 2 cups beef broth
  • 1 cup shredded cheese (cheddar or mozzarella work well)
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for sautéing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for about 5 minutes until softened.
  3. Add the ground beef to the skillet, breaking it up as it cooks. Season with salt and pepper, and cook until browned, about 6-8 minutes.
  4. Stir in the uncooked rice, French onion soup, and beef broth. Bring to a simmer and cook for about 2-3 minutes until everything is well combined.
