French Onion Ground Beef and Rice Casserole is a comforting, one-pan bake that layers savory ground beef, caramelized onions, French onion soup, and fluffy rice, all topped with gooey melted cheese—a perfect hearty dinner.

Ingredients

1 lb ground beef

1 small onion, diced (≈½ cup)

2 cups cooked rice (any variety)

1 (10.5 oz) can French onion soup (or homemade)

½ cup beef broth (or water)

1 tbsp soy sauce (optional, for extra umami)

1 tsp garlic powder

½ tsp dried thyme (optional)

¼ tsp black pepper (or to taste)

1 cup shredded cheese (cheddar, mozzarella, or mix)

1 tbsp butter (optional, for richness)

Instructions

  1. Brown Beef & Onion: In a skillet over medium-high heat, cook ground beef until no longer pink (5–7 min). Drain fat, add onion, and sauté until softened (~3–4 min).
  2. Mix & Transfer: Preheat oven to 375 °F (190 °C). In a bowl, combine beef mixture, cooked rice, French onion soup, beef broth, soy sauce, garlic powder, thyme, and pepper. Stir well. Transfer to a greased 9×9‑inch casserole dish.
  3. Add Cheese: Evenly sprinkle shredded cheese over the top. Dot with butter if desired.
  4. Bake: Cover with foil and bake 20–25 min. Remove foil and bake another 5–10 min until cheese is melted, bubbly, and lightly golden.
  5. Rest & Serve: Let cool a few minutes before serving. Garnish with parsley or herbs if desired.
