Flaky, buttery biscuits filled with tender roast beef and melty cheese, served with warm au jus for dipping. A handheld twist on the classic French dip sandwich—perfect for cozy meals or entertaining.

Ingredients

2 cups all-purpose flour

1 Tbsp baking powder

1 tsp sugar

½ tsp salt

6 Tbsp cold unsalted butter, cubed

¾ cup cold milk or buttermilk

1 cup thinly sliced roast beef

1 cup shredded Swiss or provolone cheese

For au jus:

1 cup beef broth

2 tsp Worcestershire sauce

½ tsp onion powder

¼ tsp garlic powder

Salt and pepper, to taste

Instructions

  1. Preheat oven to 425 °F. Line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, baking powder, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in milk just until dough forms.
  3. Turn dough onto a floured surface and pat into ½-inch thickness. Cut into rounds using a biscuit cutter or glass.
  4. Place half of the rounds on the prepared baking sheet. Top each with roast beef and cheese. Cover with another round and press edges lightly to seal.
  5. Brush tops with milk or melted butter. Bake for 12–15 minutes until golden.
  6. Meanwhile, combine beef broth, Worcestershire sauce, onion powder, garlic powder, salt, and pepper in a small saucepan. Simmer until warm and flavorful.
  7. Serve warm biscuits with a side of au jus for dipping.

Notes

Use very cold butter for flakier biscuits.

Customize fillings with caramelized onions or spicy cheese.

Biscuits can be assembled ahead and baked fresh later.

Double the au jus if serving a crowd or dipping generously.
