Dough Ingredients

  • 3 1/2 cups bread flour (420 g), sifted and leveled
  • 2 tsp instant yeast
  • 2 Tbsp sugar
  • 1 tsp salt
  • 1 1/3 cup fat free Greek yogurt (333 g), plain or unsweetened, drained
  • 1/2 cup plus 2 Tbsp water or milk of choice

Filling Ingredients

  • 3 Tbsp brown sugar (can also use granulated monk fruit sweetener)
  • 1 Tbsp cinnamon powder

Glaze Ingredients

  • 1 cup powdered sugar (can also use powdered monk fruit sweetener)
  • 2 Tbsp milk of choice

Instructions

  1. Mix Dry Ingredients: In the bowl of your stand mixer, combine bread flour, instant yeast, sugar, and salt thoroughly to prepare the base of the dough.
  2. Add Greek Yogurt: Add the fat free Greek yogurt to the dry ingredients in the mixer bowl.
  3. Knead Dough with Water: Start kneading the dough on a low speed (speed 2) and gradually add 1/2 cup water. Add more water one tablespoon at a time if needed until the dough forms a soft but not sticky ball.
  4. Continue Kneading: Knead for 8 to 10 minutes until the dough pulls away from the bowl and becomes stretchy and supple with a slightly bumpy texture.
  5. First Rise: Transfer dough to a lightly greased bowl, cover, and let it rise until doubled in size, about 60 to 90 minutes.
  6. Prepare Filling: While dough rises, mix brown sugar and cinnamon powder to create the cinnamon filling and set aside.
  7. Shape Dough: Punch down the risen dough and place it on a floured surface. Roll it out into a rectangle approximately 18 x 10 inches.
  8. Moisten Surface: Lightly brush or spray the dough surface with water or almond milk to help the filling stick.
  9. Spread Filling: Evenly spread the cinnamon-sugar mixture over the moist dough surface.
  10. Roll Dough: Starting from the long edge, tightly roll the dough into a log and pinch the seam to seal.
  11. Cut Rolls: Using a string or dental floss, slice the rolled dough into 12 equal-sized rolls.
  12. Prepare Baking Pan: Line a 9″ x 12″ or quarter sheet pan with parchment paper and place the rolls swirl-side up, spaced about half an inch apart.
  13. Second Rise: Let the rolls rise again until puffy, about 30 minutes. During the last 10 minutes, preheat the oven to 350°F (180°C).
  14. Bake Rolls: Bake the cinnamon rolls for 15 to 20 minutes until golden brown on top and cooked through.
  15. Make Glaze: While the rolls bake, mix powdered sugar with milk, adjusting quantities to get your desired glaze thickness. Optionally, pair with Greek Yogurt Icing for extra flavor.
  16. Glaze Rolls: After the rolls have cooled enough to handle, drizzle the glaze over the top evenly.
