These Extra Crispy Corn Fritters are golden, crunchy, and packed with sweet corn, parmesan, and fresh herbs. Perfectly crisped in a skillet and kept warm in the oven, they make a delicious snack or appetizer. Served best with sour cream, ketchup, or avocado sauce for dipping.

Ingredients

Dry Ingredients

  • 1/4 cup plain/all-purpose flour
  • 1/4 cup cornflour/cornstarch
  • 1/4 tsp baking soda (or 3/4 tsp baking powder)

Wet Ingredients

  • 1 egg
  • 2 tbsp milk (any type)

Main Ingredients

  • 2 cups fresh corn kernels (from about 2 cobs; canned or frozen also fine)
  • 1/2 cup parmesan, finely grated
  • 3/4 cup green onions, sliced
  • 1/2 cup coriander/cilantro, roughly chopped (or more green onion as substitute)

For Cooking

  • 1/2 cup vegetable oil
  • Oil spray

Instructions

  1. Preheat oven: Preheat your oven to 120°C (250°F) and place a wire rack on a baking tray. This will be used to keep the fritters warm and crispy once cooked.
  2. Mix dry ingredients: In a bowl, combine the plain flour, cornflour (cornstarch), and baking soda. Stir well to mix evenly.
  3. Add wet ingredients: Crack in the egg and add the milk to the dry mix. Stir until just combined to form a thick, lumpy batter.
  4. Fold in the corn and herbs: Add the fresh corn kernels, grated parmesan, sliced green onions, and chopped coriander to the batter. Mix until the corn is evenly coated with the batter.
  5. Heat the skillet: Pour enough vegetable oil into a skillet to just cover the base and heat it over medium-high heat.
  6. Prepare spatula: Spray the underside of your spatula with cooking oil to prevent the batter from sticking when flattening the fritters in the pan.
  7. Cook fritters: Using an ice cream scooper or spoon, place 1/4 cup of batter into the skillet. Flatten each mound gently to about 1 cm thickness. Cook in batches without crowding the skillet.
  8. Fry until crispy: Cook each side for 2-3 minutes until deep golden and crisp. Flip carefully and cook the other side for the same amount of time.
  9. Keep warm: Transfer the cooked fritters onto the wire rack in the warm oven to keep them crisp while you cook the remaining fritters. Add more oil to the pan as required.
  10. Serve: Serve the fritters warm with your choice of dipping sauce such as sour cream, ketchup, or avocado sauce.
