These easy and delicious vegetarian quinoa patties are perfect for using leftover quinoa. Packed with mozzarella, herbs, and a hint of garlic, they make a nutritious and satisfying snack or meal addition. Crispy on the outside and tender inside, they come together quickly with simple ingredients and pan-frying for a perfect golden crust.

Ingredients

Quinoa Mixture

  • 1 cup cooked quinoa
  • 2 eggs
  • ½ teaspoon oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup mozzarella cheese
  • ¼ cup finely minced red onion

Breading & Cooking

  • 1 cup panko breadcrumbs
  • 4 tablespoons avocado oil, divided

Instructions

  1. Mix Ingredients: In a medium bowl, combine the cooked quinoa, eggs, oregano, garlic powder, salt, and black pepper. Stir well to evenly incorporate the spices throughout. Then add the mozzarella cheese and finely minced red onion, folding them into the mixture carefully.
  2. Add Breadcrumbs and Rest: Stir in the panko breadcrumbs until fully combined. Let the mixture sit for a few minutes so the breadcrumbs absorb moisture, which helps the patties hold together better during cooking.
  3. Form Patties: Use a ¼ cup measuring cup to scoop out portions of the mixture. Wet your hands with water to prevent sticking, and shape each portion into a compact patty. You should be able to make about 10 patties from the mixture.
  4. Heat Oil and Cook Patties: Heat 2 tablespoons of avocado oil in a large non-stick skillet over medium heat. Once hot, place half of the patties in the pan. Cook each patty for 3 to 4 minutes on each side, or until golden brown and crisp. Remove cooked patties to a plate and repeat with remaining oil and patties.

  • If you prefer a crispier texture, you can increase cooking time slightly but be careful not to burn the patties.
