Ingredients

1 cup cooked white or brown rice (preferably chilled)

1 can (5 oz) tuna, drained

2 tablespoons mayonnaise

1 tablespoon soy sauce (optional)

1 teaspoon Dijon mustard (optional)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1 tablespoon chopped green onions (optional)

1/4 cup shredded cheese (cheddar, mozzarella, or your choice, optional)

1/2 cup breadcrumbs (for coating)

1 tablespoon olive oil or vegetable oil (for pan-frying)

Instructions

  1. In a large bowl, combine the cooked rice, drained tuna, mayonnaise, soy sauce (if using), Dijon mustard (if using), garlic powder, and onion powder. Stir until everything is well combined, making sure the tuna is evenly distributed throughout the rice.
  2. If you’d like, fold in the chopped green onions and shredded cheese for extra flavor.
  3. Wet your hands lightly to prevent the rice from sticking, then scoop out a small amount of the rice mixture and roll it into a ball, about the size of a golf ball. Repeat until all the rice mixture is used.
  4. Roll each rice ball in breadcrumbs, pressing gently to coat them evenly.
  5. Heat the olive oil in a non-stick skillet over medium heat. Once the oil is hot, add the rice balls to the skillet, cooking in batches if necessary. Fry for 2-3 minutes on each side, or until the rice balls are golden brown and crispy.
  6. Remove the rice balls from the skillet and place them on a paper towel-lined plate to absorb excess oil.
  7. Serve warm or at room temperature with a dipping sauce, such as soy sauce, sriracha mayo, or your favorite condiment.
