This Easy Tofu Pasta recipe features a unique homemade pasta dough made from silken tofu and all-purpose flour, cut into bite-sized pieces using scissors. The pasta is served with a quick and flavorful plant-based pesto sauce cooked with peas and shallots, creating a delicious and comforting meal ready in just 15 minutes.

Ingredients

Pasta Dough

  • 200g silken tofu
  • 350g all-purpose flour
  • 1 tsp salt

Sauce and Toppings

  • 1 tbsp vegetable oil
  • 1 shallot, finely chopped
  • 150g store-bought plant-based pesto
  • 150g peas
  • 1 tbsp cottage cheese or vegan burrata

Instructions

  1. Make the dough: Combine the flour, silken tofu, and salt in a bowl. Stir with chopsticks until a rough dough forms. Knead with the palm in the bowl to bring it together, adding more flour if it sticks to your hands.
  2. Knead the dough: Dust a surface with flour and knead the dough on it for 5 minutes until medium-hard and smooth.
  3. Rest the dough: Cover the dough with cling film and refrigerate while preparing the sauce.
  4. Prepare the sauce: Heat a frying pan on low, drizzle with vegetable oil, add the chopped shallots and fry for a few minutes. Add peas and pesto, stir well and keep warm.
  5. Boil water: Bring a pan of water to a rolling boil.
  6. Cut the pasta: Take the dough and, using scissors, cut it into bite-sized pieces by pressing scissors against the dough, repeating until all dough is cut.
  7. Cook the pasta: Boil the cut pasta pieces for 2 minutes. Drain the pasta but reserve some pasta water.
  8. Combine pasta and sauce: Add the cooked tofu pasta to the pesto sauce, adding a few spoonfuls of reserved pasta water to create a glossy sauce.
  9. Serve: Plate the pasta and top with cottage cheese or vegan burrata and optional chopped chillies or preferred toppings.

  • Adding flour while kneading prevents the dough from sticking and ensures a manageable consistency.
  • Using silken tofu gives the pasta a soft texture and added protein.
  • Reserved pasta water helps to loosen and emulsify the pesto sauce for better coating.
