Ingredients

Brownie Batter

  • 1 (4.5 oz) box of lemon instant pudding mix
  • 1/3 cup lemon juice (from about 3 medium or 2 large lemons)
  • 3 large eggs, room temperature
  • 1 teaspoon lemon zest

Lemon Glaze

  • 1½ cups powdered sugar
  • 3 tablespoons lemon juice (plus more to thin if needed)
  • Lemon zest for garnish

Instructions

  1. Prepare Pan: Preheat your oven to 350° F (175° C). Spray an 8 or 9-inch square baking dish with cooking spray, then line it with parchment paper, leaving some overhang on the sides for easy brownie removal.
  2. Mix Batter: Using an electric mixer on low speed, combine the yellow cake mix, lemon instant pudding mix, 1/3 cup lemon juice, eggs, and lemon zest. Mix until all ingredients are moistened and the dough is thick and well incorporated.
