Ingredients

1/2 cup ricotta cheese

2 large eggs

2 slices sourdough bread, toasted

1 tbsp butter

1/4 tsp coarse salt, plus more to taste

1 tbsp chives, chopped

Instructions

  1. Toast two slices of sourdough bread until golden.
  2. In a nonstick skillet over medium-low heat, melt the butter.
  3. Whisk the eggs with a pinch of coarse salt and pour into the skillet.
